Cucumber  Onion Slices Recipe
This is something I make quite often during the summer, especially when family is visiting from the Lower 48. Never lasts long.

Ingredients
  • 3 to 4 medium cucumbers, sliced
  • 1 to 2 medium onions, sliced
  • 1 Tbsp. dill weed
  • 2-3/4 Cups sugar
  • 1-1/2 Cups vinegar
  • 3 Cups water
  • 1 tsp salt

Directions
  1. Slice the cucumbers & onions and place in a large bowl. Add the dill weed and set aside.
  2. In a saucepan, combine sugar, vinegar, water & salt; bring to a boil.
  3. Pour over cucumber mixture.
  4. Cover & refrigerate for 3 hours or overnight.
  5. Yield: 6 Cups
  6. I've altered this recipe from time to time depending on how many cucumbers I have. I always make sure I have enough of the sugar/vinegar mixture to cover all the veggies.

My daughter will eat a whole bowl by herself if I'm not careful. So refreshing and yummy. Have to make some soon. Like TOMORROW!!!!


Nevermind the kids I can eat the whole bowl myself. I love these especially in hot weather.
