Mamaliga Polenta With Feta

- 1 cup corn meal (preferably coarse) shopping list
- 4 cups water shopping list
- 1/2 Tsp salt shopping list
- 1 1/2 cup feta cheese shopping list
- 1 cup cottage cheese shopping list
- 1 Tbs chopped parsley shopping list
How to make it
- Use a large pot to boil the water, then in a gentle stream add the cornmeal while constantly whisking - this will prevent forming lumps.
- Reduce to low heat and add the salt, continuing whisking the mamaliga frequently.
- Keep whisking periodically for about 30-40 minutes, until the mamaliga (polenta) starts pulling away from the pot’s sides.
- Add the feta cottage cheese and crumbled feta, and add the chopped parsley on top.
