Ingredients
  • 1 cup corn meal (preferably coarse)
  • 4 cups water
  • 1/2 Tsp salt
  • 1 1/2 cup feta cheese
  • 1 cup cottage cheese
  • 1 Tbs chopped parsley

Directions
  1. Use a large pot to boil the water, then in a gentle stream add the cornmeal while constantly whisking - this will prevent forming lumps.
  2. Reduce to low heat and add the salt, continuing whisking the mamaliga frequently.
  3. Keep whisking periodically for about 30-40 minutes, until the mamaliga (polenta) starts pulling away from the pot’s sides.
  4. Add the feta cottage cheese and crumbled feta, and add the chopped parsley on top.

it's a dish commonly known to the Balkanic countries but for the West, is known as Polenta.
