How to make it

  • Use a large pot to boil the water, then in a gentle stream add the cornmeal while constantly whisking - this will prevent forming lumps.
  • Reduce to low heat and add the salt, continuing whisking the mamaliga frequently.
  • Keep whisking periodically for about 30-40 minutes, until the mamaliga (polenta) starts pulling away from the pot’s sides.
  • Add the feta cottage cheese and crumbled feta, and add the chopped parsley on top.
