Mexican-style Country Ribs Recipe
This is such an easy and versatile dinner that I came up with to use some tomatillos and peppers from my farmshare. It's great on nachos, in tacos, enchiladas or burritos. And pork country ribs are wonderful when braised. And what a bargain!!

Ingredients
  • 2-4 lbs pork country ribs (depends on the size of your slow cooker)
  • 8-15 fresh tomatillos, cleaned and cut in quarters
  • 1 onion, sliced
  • 1-3 jalapeno or serrano chiles, roughly chopped (depending on your taste for "heat")
  • 1-2 cubanelle (or other variety) peppers, chopped
  • salt and pepper to taste
  • 4 or more garlic cloves, roughly chopped
  • 1 cup chicken broth

Directions
  1. Place in slow cooker in this order:
  2. tomatilloes, onions, peppers, garlic, pork ribs.
  3. Season with salt and pepper.
  4. Pour chicken broth around sides.
  5. Slow cook on low for 6-8 hours.
  6. Remove pork to plate.
  7. Puree vegetables and liquid in blender or food processor.
  8. Put puree back in crock pot and turn to high.
  9. Debone pork ribs, and add meat to sauce in crockpot.
  10. Serve when heated though and bubbly.
  11. Perfect as enchilada, burrito or taco filling, or on nachos, or anything!
