Thai Mango Cake

- 1 C roasted macadamia nuts , crushed shopping list

- 3 L Thai mangoes , more than 2 kg shopping list
- Dice and keep 100 gm aside . shopping list
- Save the juice and puree along with the remaing cubes . shopping list
- Must have 1 C puree shopping list

- 250 g butter shopping list
- 1 tsp vanilla essence shopping list
- 1 C caster sugar shopping list
- 4 L eggs shopping list
- .............. shopping list
- 1 1/2 tsp baking pwd shopping list
- 2 C plain flour shopping list
- ............................. shopping list
- 1/2 C roasted macadamia nuts , chopped shopping list
- icing sugar to taste . shopping list
- ......................... shopping list
- Whip 500 ml cream with 1 tsp nutmeg - until thick shopping list
- 1 mango sliced shopping list
How to make it
- Pre heat the oven at 170 deg C .
- Grease a 22 cm cake pan .
- 1 C unsalted roasted macadamia nuts - crush in blender . set aside .
- .....
- Beat butter , vanilla , and the 1/2 C sugar until thick and pale .
- Add the reamining 1/2 C caster sugar again .
- Beat well .
- Now , add the eggs and beat well .
- ..............
- In a bowl add the crushed nuts , baking pwd and the flour .
- Mix the puree and the butter mixture .
- .............................
- Sprinkle the chopped macadamia nuts and diced mangoes
- Swirl it in .
- Bake for 50 mins .
- cool .
- Dredge with icing sugar .
- .........................
- Serve along with cream and mangoe slices
