How to make it

  • you should have a thermastate on the smoker
  • 250 degrees is just right. you can adjust the heat by open or close the the air vents.
  • buy a bag of hickory chips, next to the charcoal, in the store
  • soak your chips in water 3-4 hrrs. whan your charcoal gets going good, mput a handfull of chips in there. keep an eye on the water
  • dont let it run out. a good long funnel is good for this
  • smoke that chicken for 2 1/2 hrs 3 hrs you usually get a times to cook book with the smoker.
  • tips before cooking rub the bird with seasonings. inside and out
  • and look at my recipes, for bacon wrap jalapinos. if you don't like a lot of hot spices, leave the jalapino seeeds out

    Oh sure, where were you at the beginning of the summer, when my husband got his smoker?! Printing this for him so maybe next year everything won't taste like ashes.
