Very rich, individual-sized cheesecakes. big favorite among my family and friends. i can only make them if there is a party, or i'll go into a sugar coma from eating too many myself!

Ingredients
  • CHOCOLATE CRUMB CRUST
  • 1 1/2 cups vanilla wafer crumbs
  • 6 tbsp melted butter
  • 6 tbsp powdered sugar
  • 6 tbsp cocoa
  • stir together all ingredients
  • CHEESECAKE
  • 1/2 cup cocoa
  • 1/4 cup butter, melted
  • 3 packs (8 oz. each) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 3 eggs (room temperature)
  • 2 teaspoons vanilla extract
  • CHOCOLATE GLAZE
  • 2 cups semi-sweet chocolate chips
  • 1 cup whipping cream
  • 1 tsp vanilla
  • melt together all ingredients
  • stir until smooth
  • use immediately

Directions
  1. Heat oven to 300
  2. paper-line or cooking spray to 24 muffin cups
  3. press 1 heaping tablespoonful crumbs onto bottoms of each cup
  4. stir together cocoa and butter
  5. beat cheese until fluffy
  6. beat in cocoa mixture
  7. gradually beat in sweetened condensed milk
  8. beat in eggs and vanilla
  9. spoon into cups
  10. bake 35 minutes or until set
  11. cool (if cooking spray is used, cool baked cheesecakes. freeze 15 minutes; remove with narrow spatula)
  12. spread chocolate glaze over top
  13. refrigerate
