Ingredients
  • 1 can (6-1/2 oz.) minced clams
  • 2 T diced onion
  • 5 T butter or margarine, divided
  • 2 T flour
  • 3-1/2 t prepared horseradish
  • 1/4 t garlic powder
  • 1/4 t Worcestershire sauce
  • dash of salt
  • 9 slices of white bread, crusts removed
  • Paprika

Directions
  1. Drain clams, reserving juice; set aside.
  2. In a skillet, saute onion in 1 tablespoon of butter until tender.
  3. Stir in flour until blended.
  4. Gradually add horseradish, garlic power, worcestershire sauce, salt and reserved clam juice.
  5. Bring to a boil; cook and stir for 2 minutes or unti thickened.
  6. Remove from heat; stir in clams.
  7. Flatten bread with a rolling pin.
  8. Melt remaining butter; brush one side of each slice of bread.
  9. Spread with clam mixture; roll up.
  10. Brush with remaining butter; sprinkle with paprika.
  11. Cut rolls into thirds; place on a greased baking sheet
  12. Bake at 425 deg. F for 5-8 minutes or until lightly brown.
  13. Serve warm
  14. Yield: 27 appetizers

Oh, these sound good....how did I miss these. Anyone remember the HoJo's yummy clam rolls? I adored those when I was little. I like this use of clam, something different from clam sauce and cheaper than shrimp toast. Will be on the appetizer table for Christmas eve at my house for sure. YUMMY
