I like to make this with my leftovers from thanksgiving, or traditional sunday type dinners. Aside from the pie crusts; this recipe is very quick and easy, because everything is already cooked. Amounts are estimated, I never measure.

Ingredients
  • 2 Pie crusts (this is a covered pie) (Oil crust recipe works well for this)
  • 1 c. chicken/turkey leftovers (shredded or cubed)
  • 1 c. mixed vegetables -corn, peas, limas, potato, carrot, celery
  • (all of these should have already been cooked, if not, cook on stove top with some chicken broth until tender)
  • 1/2 c. gravy (just enough to make filling moist

Directions
  1. Preheat oven to 350 degrees F.
  2. Mix together all ingredients, except pie crust, and set aside.
  3. In 9" pie plate, place one crust.
  4. Add filling, and cover with second crust.
  5. Seal edges, and cut a slit in the top middle of your pie.
  6. Bake about 20 minutes, or until your crust is done. Remember, everything else was precooked, so you're just warming it up.
