Ingredients

16 oz cream cheese

1/2 lbs cheddar cheese grated

1/2 cup chopped deli-sliced jalapenos (pickled)

1 cup whipping cream

1 Tablespoon lime juice

1/2 teas salt

1/2 teas pepper

1/2 teas garlic powder

1/2 cup brine from jalapenos

1 envalope unflavored gelatine

24 ritz crackers

Directions

In a sauce pan sprinkle gelatine over brine , let stand and dessolve (5 minutes)

In a mixing bowl, mix together cream cheese, cheddar cheese, chopped jalapenos, lime juice, whipping cream, salt, pepper, garlic powder, until combined

Heat the brine and gelatine, do not boil.

pour brine and gelatine into the cheese mixture and mix well.

Spoon into paper lined cupcake pans that have a Ritz cracker at the bottom. .Fill about 3/4 full.

Chill until firm. About 1 hour

This is also wonderful made with other cheeses besides cheddar. You can also replace the jalapenos with olives, artichokes, or roasted garlic cloves..
