Jalapeno and Cheddar cheese cupcakes

- 16 oz cream cheese shopping list
- 1/2 lbs cheddar cheese grated shopping list
- 1/2 cup chopped deli-sliced jalapenos (pickled) shopping list
- 1 cup whipping cream shopping list
- 1 Tablespoon lime juice shopping list
- 1/2 teas salt shopping list
- 1/2 teas pepper shopping list
- 1/2 teas garlic powder shopping list
- 1/2 cup brine from jalapenos shopping list
- 1 envalope unflavored gelatine shopping list
- 24 Ritz crackers shopping list
How to make it
- In a sauce pan sprinkle gelatine over brine , let stand and dessolve (5 minutes)
- In a mixing bowl, mix together cream cheese, cheddar cheese, chopped jalapenos, lime juice, whipping cream, salt, pepper, garlic powder, until combined
- Heat the brine and gelatine, do not boil.
- pour brine and gelatine into the cheese mixture and mix well.
- Spoon into paper lined cupcake pans that have a Ritz cracker at the bottom. .Fill about 3/4 full.
- Chill until firm. About 1 hour
- This is also wonderful made with other cheeses besides cheddar. You can also replace the jalapenos with olives, artichokes, or roasted garlic cloves..
