Ingredients
  • 75g light muscovado sugar
  • 100 ml sunflower oil
  • 2 eggs
  • 1 mashed banana
  • 110g self raising flour
  • 15g cocoa
  • 40g white chocolate, melted to decorate

Directions
  1. Preheat oven to 180c /350f /gas 4 and put in 10 paper muffin cases into a muffin tray. Mix the sugar and oil in a bowl and whisk together. Add the eggs and whisk until smooth.
  2. Add the banana, cocoa and flour and whisk until mixed. Spoon into the muffin cases and cook for 10 minutes or till well risen.
  3. Leave until cool
  4. Transfer the muffins to the serving plate and drizzle the white melted chocolate over the top with a teaspoon.
