Savoury Baked Crepes Recipe
This is a less fussy way to make crepes with filling that the whole family can enjoy.

Ingredients
  • sliced mushrooms
  • 6 eggs
  • 3 cups flour
  • 3 cups milk
  • 1 tsp salt
  • 2 tbsp oil
  • 500 grams ricotta cheese
  • 4 tbsp crushed garlic
  • 1/3 cup butter
  • herbs to taste - thyme, or a prepared herb medley work well
  • Salt
  • Pepper
  • Sugar
  • 250 ml heavy cream (33%)

Directions
  1. 1. Preheat oven to 400 degrees F.
  2. 2. Prepare crepe batter by mixing eggs, flour, milk, salt and oil in a large bowl. Beat until smooth.
  3. 3. Prepare 9x13" pan with cooking spray and set aside.
  4. 4. In a large skillet, melt butter and add garlic - saute for 3 minutes.
  5. 5. Add mushrooms to skillet and saute until cooked.
  6. 6. While mushrooms are cooking, pour crepe batter onto griddle to make rectangular crepes, 10 by 3". You will need 8 crepes.
  7. 7. Add ricotta cheese to pan and cook until melted.
  8. 8. Add salt, pepper and herbs to taste.
  9. 9. Remove from heat while cooking the crepes.
  10. 10. Line bottom of pan with 4 crepes.
  11. 11. Spread mushroom ricotta mixture over crepe layer.
  12. 12. Top with another layer of crepes.
  13. 13. Sprinkle sugar over top of crepes, top with salt and pepper.
  14. 14. Pour cream over entire top layer.
  15. 15. Bake for 30 minutes.
