Savoury Baked Crepes

- sliced mushrooms shopping list
- 6 eggs shopping list
- 3 cups flour shopping list
- 3 cups milk shopping list
- 1 tsp salt shopping list
- 2 tbsp oil shopping list
- 500 grams ricotta cheese shopping list
- 4 tbsp crushed garlic shopping list
- 1/3 cup butter shopping list
- herbs to taste - thyme, or a prepared herb medley work well shopping list
- salt shopping list
- pepper shopping list
- sugar shopping list
- 250 ml heavy cream (33%) shopping list
How to make it
- 1. Preheat oven to 400 degrees F.
- 2. Prepare crepe batter by mixing eggs, flour, milk, salt and oil in a large bowl. Beat until smooth.
- 3. Prepare 9x13" pan with cooking spray and set aside.
- 4. In a large skillet, melt butter and add garlic - saute for 3 minutes.
- 5. Add mushrooms to skillet and saute until cooked.
- 6. While mushrooms are cooking, pour crepe batter onto griddle to make rectangular crepes, 10 by 3". You will need 8 crepes.
- 7. Add ricotta cheese to pan and cook until melted.
- 8. Add salt, pepper and herbs to taste.
- 9. Remove from heat while cooking the crepes.
- 10. Line bottom of pan with 4 crepes.
- 11. Spread mushroom ricotta mixture over crepe layer.
- 12. Top with another layer of crepes.
- 13. Sprinkle sugar over top of crepes, top with salt and pepper.
- 14. Pour cream over entire top layer.
- 15. Bake for 30 minutes.
