How to make it

  • 1. Preheat oven to 400 degrees F.
  • 2. Prepare crepe batter by mixing eggs, flour, milk, salt and oil in a large bowl. Beat until smooth.
  • 3. Prepare 9x13" pan with cooking spray and set aside.
  • 4. In a large skillet, melt butter and add garlic - saute for 3 minutes.
  • 5. Add mushrooms to skillet and saute until cooked.
  • 6. While mushrooms are cooking, pour crepe batter onto griddle to make rectangular crepes, 10 by 3". You will need 8 crepes.
  • 7. Add ricotta cheese to pan and cook until melted.
  • 8. Add salt, pepper and herbs to taste.
  • 9. Remove from heat while cooking the crepes.
  • 10. Line bottom of pan with 4 crepes.
  • 11. Spread mushroom ricotta mixture over crepe layer.
  • 12. Top with another layer of crepes.
  • 13. Sprinkle sugar over top of crepes, top with salt and pepper.
  • 14. Pour cream over entire top layer.
  • 15. Bake for 30 minutes.
