Tomato Florentine Soup With Dill

- 1 can diced tomato shopping list
- 1/4 cup finely minced white onion shopping list
- 2 teaspoons butter shopping list
- 1/3 cup heavy whipping cream shopping list
- 1-1/2 ounces cream cheese shopping list
- 1 rounded teaspoon dill weed shopping list
- 1 tablespoon finely chopped spinach shopping list
- 1/4 teaspoon dried minced garlic shopping list
How to make it
- Soften garlic in hot water for a few minutes.
- Sauté onion in butter adding a bit of water so onion cooks and is soft.
- Meanwhile whirl spinach in a food processor or blender until it is mushy.
- Add dill weed, spinach and can of tomatoes with juice and onion garlic mixture.
- Simmer slowly until blended and onion and garlic are soft.
- Just before done stir in cream cheese and stir until it is dissolved.
- Add cream and simmer for 5 minutes.
