Blackberry Cornbread

- 1-1/4 cups all purpose flour shopping list
- 3/4 cup yellow cornmeal shopping list
- 1/4 cup granulated sugar shopping list
- 4 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 1 egg shopping list
- 1 cup buttermilk shopping list
- 2 tablespoons butter melted shopping list
- 3/4 cup blackberry jam shopping list
How to make it
- Preheat oven to 375 then grease square baking pan.
- Combine flour, cornmeal, sugar, baking powder, soda and salt in large shallow bowl.
- Mix until well blended then make well in center.
- In large measuring cup whisk egg, buttermilk and melted butter.
- Pour buttermilk mixture into well then stir ingredients together just until evenly moistened.
- Batter should be lumpy so do not over mix.
- Spoon batter into prepared baking pan spreading evenly into corners with rubber spatula.
- With a spoon drop strawberry jam in dollops over top of the batter spacing them evenly.
- Bake 30 minutes or until the top is lightly browned.
