BLACKBERRY CORNBREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.

Ingredients
  • 1-1/4 cups all purpose flour
  • 3/4 cup yellow cornmeal
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoons butter melted
  • 3/4 cup blackberry jam

Directions
  1. Preheat oven to 375 then grease square baking pan.
  2. Combine flour, cornmeal, sugar, baking powder, soda and salt in large shallow bowl.
  3. Mix until well blended then make well in center.
  4. In large measuring cup whisk egg, buttermilk and melted butter.
  5. Pour buttermilk mixture into well then stir ingredients together just until evenly moistened.
  6. Batter should be lumpy so do not over mix.
  7. Spoon batter into prepared baking pan spreading evenly into corners with rubber spatula.
  8. With a spoon drop strawberry jam in dollops over top of the batter spacing them evenly.
  9. Bake 30 minutes or until the top is lightly browned.
