Pan Sauteed Chicken With Vegetables And Herbs Recipe
Easy and delicious chicken and vegetable dish.

Ingredients
  • 1/8tsp pepper
  • 1/8tsp paprika
  • 2Tbs flour
  • 4 bone-in chicken breast halves
  • 2Tbs olive oil
  • 2 small red onions,cut in quarters
  • 1lb. new potatoes,cut in quarters
  • 8 oz fresh whole baby carrots(about 16)
  • 11/2c chicken stock
  • 3Tbs lemon juice
  • 1Tbs chopped fresh oregano leaves
  • 1Tbs chopped fresh thyme leaves

Directions
  1. Heat oven to 350. Combine black pepper,paprika and flour. Coat the chicken in flour mixture.
  2. Heat oil in 12" oven safe skillet over med. high heat. Add the chicken and cook till it's well browned on all sides. Remove chicken from skillet.
  3. Add onions and potatoes to the skillet and cook 5 mins. Add the carrots,stock, lemon juice and oregano and heat to boil. Return chicken to skillet. Cover the skillet.
  4. Bake at 350 for 20 mins. Uncover the skillet and bake 15 mins. or till the chicken is cooked through and vegetables are tender. Sprinkle with the thyme.
