Pan Sauteed Chicken with Vegetables and Herbs

- 1/8tsp pepper shopping list
- 1/8tsp paprika shopping list
- 2Tbs flour shopping list
- 4 bone-in chicken breast halves shopping list
- 2Tbs olive oil shopping list
- 2 small red onions,cut in quarters shopping list
- 1lb. new potatoes,cut in quarters shopping list
- 8 oz fresh whole baby carrots(about 16) shopping list
- 11/2c chicken stock shopping list
- 3Tbs lemon juice shopping list
- 1Tbs chopped fresh oregano leaves shopping list
- 1Tbs chopped fresh thyme leaves shopping list
How to make it
- Heat oven to 350. Combine black pepper,paprika and flour. Coat the chicken in flour mixture.
- Heat oil in 12" oven safe skillet over med. high heat. Add the chicken and cook till it's well browned on all sides. Remove chicken from skillet.
- Add onions and potatoes to the skillet and cook 5 mins. Add the carrots,stock, lemon juice and oregano and heat to boil. Return chicken to skillet. Cover the skillet.
- Bake at 350 for 20 mins. Uncover the skillet and bake 15 mins. or till the chicken is cooked through and vegetables are tender. Sprinkle with the thyme.
