Ingredients

How to make it

  • Core and finely chop unpeeled pears to measure 1 1/4 cups.
  • Combine with eggs and bran; let stand while preparing remaining ingredients.
  • Sift flour with sugar, baking powder, salt, and soda into mixing bowl.
  • Add shortening and pear-bran mixture
  • Mix until well moistened.
  • Stir in walnuts.
  • Turn into a well greased loaf pan. (Poof, presto chango, you are a loaf pan! -Ha! -Bad joke!)
  • Let stand 20 more minutes.
  • Bake at 350 about one hour, or until toothpick comes out clean.
  • Let stand 10 minutes, then turn onto wire rack to cool,
  • Spread with lemon mint butter if desired.
  • For mint butter: Beat 1 cup softened butter or margarine with 1 t. grated lemon peel and 2 T. chopped fresh mint leaves.
  • Decorate top of loaf with thinly sliced fresh pears before baking if desired. ( takes about 1/2 pear)
