Picnic Pear Nut Bread

- 2 fresh, fully ripe bartlett pears shopping list
- 2 large eggs, beaten shopping list
- 1 cup whole bran shopping list
- 1 1/2 cups sifted all purpose flour shopping list
- 1/2 cup sugar shopping list
- 1 t. baking powder shopping list
- 1/2 salt shopping list
- 1.2 t, baking soda shopping list
- 1/4 cup softened shortening or butter shopping list
- 1/2 cup chopped walnuts or pecans shopping list
How to make it
- Core and finely chop unpeeled pears to measure 1 1/4 cups.
- Combine with eggs and bran; let stand while preparing remaining ingredients.
- Sift flour with sugar, baking powder, salt, and soda into mixing bowl.
- Add shortening and pear-bran mixture
- Mix until well moistened.
- Stir in walnuts.
- Turn into a well greased loaf pan. (Poof, presto chango, you are a loaf pan! -Ha! -Bad joke!)
- Let stand 20 more minutes.
- Bake at 350 about one hour, or until toothpick comes out clean.
- Let stand 10 minutes, then turn onto wire rack to cool,
- Spread with lemon mint butter if desired.
- For mint butter: Beat 1 cup softened butter or margarine with 1 t. grated lemon peel and 2 T. chopped fresh mint leaves.
- Decorate top of loaf with thinly sliced fresh pears before baking if desired. ( takes about 1/2 pear)
