How to make it

  • Get a large pot of salted water to boiling. In a small skillet over medium heat, add butter and olive oil. When hot, add onion, bell pepper, and celery. Saute until crisp-tender.
  • Add can tomatoes, bring to boil and reduce heat to low and simmer 10 minutes. Then toss in velveeta cheese, stir while it is melting
  • Add pasta to boiling water and cook according to package directions until al dente. Drain pasta thoroughly. Add cheese sauce to pasta in big pot, stir well. Serve
