How to make it

  • Heat oil in large skillet. Shake chicken pieces in flour.
  • Add a few pieces to hot oil and brown on all sides.
  • Reove, as browned, to shallow baking dish, arrange skin side up.
  • Sprinkle with salt and pepper.
  • While making sauce, preheat oven to 350.
  • Drain pineapple, pouring juice into 2 cup measure.
  • Add water to make 1 1/4 cups.
  • In medium saucepan, combine sugar, cornstarch, pineapple juice, vinegar, soy sauce, ginger and bouillon cube.
  • Bring to a boil, stirring constantly. Boil 2 minutes.
  • Pour over chicken.
  • Bake uncovered for 30 minutes.
  • Add pineapple, peppers and waterchestnuts.
  • Bake an additional 30 minutes longer or until chicken is tender.
  • Serve over rice.
