Chicken Waikiki Beach

- 1 chicken, cut up shopping list
- 1/2 cup flour shopping list
- 1/2 cup vegetable oil shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- Sauce: shopping list
- 1 (20 oz. can pineapple chunks in its own juice shopping list
- 1 cup sugar shopping list
- 2 Tablespoons cornstarch shopping list
- 3/4 cup cider vinegar shopping list
- 1 Tablespoon soy sauce shopping list
- 1/4 teaspoon ground ginger shopping list
- 1 chicken bouillion cube shopping list
- 1 large green pepper, cut in strips shopping list
- 1 red pepper, cut in strips shopping list
- 1 can sliced water chestnuts, drained (optional) shopping list
How to make it
- Heat oil in large skillet. Shake chicken pieces in flour.
- Add a few pieces to hot oil and brown on all sides.
- Reove, as browned, to shallow baking dish, arrange skin side up.
- Sprinkle with salt and pepper.
- While making sauce, preheat oven to 350.
- Drain pineapple, pouring juice into 2 cup measure.
- Add water to make 1 1/4 cups.
- In medium saucepan, combine sugar, cornstarch, pineapple juice, vinegar, soy sauce, ginger and bouillon cube.
- Bring to a boil, stirring constantly. Boil 2 minutes.
- Pour over chicken.
- Bake uncovered for 30 minutes.
- Add pineapple, peppers and waterchestnuts.
- Bake an additional 30 minutes longer or until chicken is tender.
- Serve over rice.
