Russian Ricotta Cake

- Crust : shopping list
- 3 tbsp sugar and brown sugar shopping list
- 3 tbsp butter softened shopping list
- 3/4 C ground walnuts shopping list
- 3/4 C plain flour and 1 tsp baking pwd shopping list
- 1/2 tsp nutmeg shopping list
- ............................................................ shopping list
- 500 to 700 g cream cheese shopping list
- 200 to 300 g soft white cheese like ricotta shopping list
- 1 C sugar shopping list
- 6 yolks shopping list
- juice and zest of 1 Large lemon shopping list
- 3 tbsp flour shopping list
- ................ shopping list
- 6 egg whites shopping list
- 1 C heavy cream shopping list
- ... shopping list
- 1 C sultanas and icing sugar ( optional ) shopping list
How to make it
- Pre heat oven at 200 deg C .
- Line a 28 cm pan .
- Crust :
- Pulse everything until stiff dough forms .
- Roll out and press over base .
- Bake for 10 mins and cool it .
- ............................................................
- Beat the cheese and sugar until smooth .
- Add the yolks , juice , zest and flour
- Beat until well combined .
- ................
- Beat the whites until thick and glossy .
- Beat the cream until soft peaks form .
- Fold into cheese .....
- And sprinkle the sultanas ( optional ) . Stir it in .
- ......
- Bake them for 10 mins
- Lower the temp to 150 deg C .
- Continue to bake for 1 hr .
- Leave it in the oven ....
- Once cool , chill overnight
- ....
- Sprinkle icing sugar and serve COLD
