How to make it

  • Cook the potatoes until tender
  • Meanwhile, in a huge fry pan, saute the garlic in the butter on low, stirring constantly for 5minutes. Do not let turn color.
  • Add the parsley, cook 1 minute
  • Add the broth
  • Put the potatoes through the food processor until creamy but leave some lumps. Add a tsp of the potato water if it isn't moving freely
  • Add the potatoes to the garlic pan
  • Add the cream
  • Salt and Pepper
  • On low cook for 10 minutes
  • Stir in the Parmesan
  • Add the hot pepper if you wish.
  • I have been eating raw garlic for about 10 years because I was always getting sick. Haven't had a cold in as much time.

    A great recipe and very good information too - can't beat that! Sas hon - you rock - and I am totally down with the health benefits of garlic and other power foods. And I bet this soup is awesome. I am hungry just looking at it and will give it a spin very soon. Plus, if I was sick - this would be the perfect food to serve me.
