Petite Cherry Cheese Cakes Recipe
I found this recipe in a 1970's Eat Your Heart Out cookbook. Great, tiny, bite size desserts for pot lucks, smorgasborgs or just by yourself,

Ingredients
  • 2 - 8 onz. pkgs. of cream cheese, softened
  • 3/4 cups sugar
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 24 vanilla wafers
  • 1 can of cherry pie filling or other fruit topping

Directions
  1. Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy
  2. Line small muffin tins with paper baking cups
  3. Place a vanilla wafer in th botton of each cup.
  4. Fill cups two thirds full of cream cheese mixture.
  5. Bake at 375 for 15-20 minutes or until set.
  6. Top each with about 1 Tbsp. of fruit topping
  7. Chill
  8. Yields two dozen
