Petite Cherry Cheese Cakes

- 2 - 8 onz. pkgs. of cream cheese, softened shopping list
- 3/4 cups sugar shopping list
- 2 eggs shopping list
- 1 Tbsp. lemon juice shopping list
- 1 tsp. vanilla shopping list
- 24 vanilla wafers shopping list
- 1 can of cherry pie filling or other fruit topping shopping list
How to make it
- Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy
- Line small muffin tins with paper baking cups
- Place a vanilla wafer in th botton of each cup.
- Fill cups two thirds full of cream cheese mixture.
- Bake at 375 for 15-20 minutes or until set.
- Top each with about 1 Tbsp. of fruit topping
- Chill
- Yields two dozen
