Oatmeal choco chip icecream sandwich

- 1 cup margarine or butter, softened shopping list
- 1 cup firmly packed brown sugar shopping list
- 1/2 cup granulated sugar shopping list
- 2 large eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 1 cups all-purpose flour shopping list
- 1/2 cup cake flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/2 teaspoon salt (optional) shopping list
- 3 cups Quaker Oats (quick or old fashioned, uncooked) shopping list
- 1 cup semi-sweet chocolate chips shopping list
- About 1 quart vanilla ice cream, softened shopping list
How to make it
- 1. Heat oven to 350°F.
- 2. Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well.
- 3. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and chips; mix well.
- 4. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- 5. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely.
- 6. To make sandwiches, spread softened ice cream on bottom side of one cookie; top with second cookie. Wrap airtight; freeze for at least 1/2 hour.
