Ingredients
  • 3 eggs
  • 3/4 c. Veg. Oil
  • 3/4 c. Buttermilk
  • 2 c. All-purpose flour
  • 2 c. Sugar
  • 2 tsp. Baking soda
  • 2 tsp. Ground cinnamon
  • 1/2 tsp. Salt
  • 2 tsp. Vanilla extract
  • 2 c. Finely shredded carrots
  • 1 c. Raisins
  • 1 can (8 oz.) crushed pineapple, undrained
  • 1 c. Chopped walnuts
  • 1 c. Flaked coconut
  • Frosting:
  • 1 pkg. (8 oz.) cream cheese, softened
  • 4 to 4 1/2 c. Confectioners sugar
  • 1-2 T. Whipping cream
  • 1 tsp. Vanilla extract

Directions
  1. In a large mixing bowl, beat eggs, oil and buttermilk. Combine flour, sugar,
  2. Baking soda, cinnamon and salt; add to egg mixture and mix well. Stir in
  3. Vanilla, carrots, raisins, pineapple, walnuts and coconut; mix well. Pour into
  4. A greased 13 in. X 9 in. X 2 in. Baking pan. Bake at 350 degrees for 45-50
  5. Minutes or until a toothpick comes out clean. Cool.
  6. Combine frosting ingredients in a mixing bowl; beat until smooth. Frost cake.
  7. Refrigerate leftovers.
