Tropical Carrot Cake

- 3 eggs shopping list
- 3/4 c. Veg. oil shopping list
- 3/4 c. buttermilk shopping list
- 2 c. all-purpose flour shopping list
- 2 c. sugar shopping list
- 2 tsp. baking soda shopping list
- 2 tsp. ground cinnamon shopping list
- 1/2 tsp. salt shopping list
- 2 tsp. vanilla extract shopping list
- 2 c. Finely shredded carrots shopping list
- 1 c. raisins shopping list
- 1 can (8 oz.) crushed pineapple, undrained shopping list
- 1 c. Chopped walnuts shopping list
- 1 c. flaked coconut shopping list
- Frosting: shopping list
- 1 pkg. (8 oz.) cream cheese, softened shopping list
- 4 to 4 1/2 c. Confectioners sugar shopping list
- 1-2 T. whipping cream shopping list
- 1 tsp. vanilla extract shopping list
How to make it
- In a large mixing bowl, beat eggs, oil and buttermilk. Combine flour, sugar,
- Baking soda, cinnamon and salt; add to egg mixture and mix well. Stir in
- Vanilla, carrots, raisins, pineapple, walnuts and coconut; mix well. Pour into
- A greased 13 in. X 9 in. X 2 in. Baking pan. Bake at 350 degrees for 45-50
- Minutes or until a toothpick comes out clean. Cool.
- Combine frosting ingredients in a mixing bowl; beat until smooth. Frost cake.
- Refrigerate leftovers.

The carrot cake itself is good. The frosting is okay, although we didn't care for it. If I make this again, I will use a different cream cheese frosting that has butter in it. For more details see "I Made It II:" more
