A delightful, tasty and QUICK appetizer, sure to please. Look for shrimp chips in Asian grocery stores. If shrimp chips or crackers aren't available, sesame, teriyaki or sea vegetable crackers will work as well.

Ingredients
  • 1/2 cup granulated sugar
  • 1/2 cup seasoned rice vinegar
  • 1 tsp grated lime rind
  • 1/3 cup freshly squeezed lime juice
  • 1/4 tsp hot pepper flakes
  • 1/4 tsp salt
  • 1 English cucumber
  • 2 carrots, shredded
  • Thai shrimp chips or shrimp flavored rice crackers

Directions
  1. Combine sugar, vinegar, lime rind and juice, hot pepper flakes and salt in a small saucepan.
  2. Bring to boil over medium heat, stirring, until sugar is dissolved.
  3. Remove from heat and let cool for 5 minutes.
  4. Cut cucumber in half lengthwise.
  5. Cut each half into thin slices.
  6. Place in a bowl with carrots.
  7. Pour hot vinegar mixture over vegetables and toss to coat.
  8. Leave to cool.
  9. Cover and refrigerate for at least 2 hours or up to 1 day until vegetables are soft and infused with flavor.
  10. Serve slaw in a bowl to top shrimp chips or crackers.
