Cucumber and Carrot Slaw on Shrimp Chips

- 1/2 cup granulated sugar shopping list
- 1/2 cup seasoned rice vinegar shopping list
- 1 tsp grated lime rind shopping list
- 1/3 cup freshly squeezed lime juice shopping list
- 1/4 tsp hot pepper flakes shopping list
- 1/4 tsp salt shopping list
- 1 english cucumber shopping list
- 2 carrots, shredded shopping list
- Thai shrimp chips or shrimp flavored rice crackers shopping list
How to make it
- Combine sugar, vinegar, lime rind and juice, hot pepper flakes and salt in a small saucepan.
- Bring to boil over medium heat, stirring, until sugar is dissolved.
- Remove from heat and let cool for 5 minutes.
- Cut cucumber in half lengthwise.
- Cut each half into thin slices.
- Place in a bowl with carrots.
- Pour hot vinegar mixture over vegetables and toss to coat.
- Leave to cool.
- Cover and refrigerate for at least 2 hours or up to 1 day until vegetables are soft and infused with flavor.
- Serve slaw in a bowl to top shrimp chips or crackers.
