  • Perfect Yeast Breads and Rolls are:
  • High and evenly shaped.
  • Uniformly golden brown with a tender crust.
  • Even in texture with no large air holes.
  • Moist and silky with an elastic quality.

Directions
  1. Problem: Possible Cause:
  2. Not High-----water too hot for yeast, too little flour, too little kneading, too short rising period, pan too large.
  3. Coarse Texture----rising time too long, too little flour, too little kneading, oven too cool.
  4. Harsh, Dry and Not Silky----too much flour, not kneaded enough.
  5. Yeasty Taste----rising time too long, temperature too high during rising time.
