Cinnamon Apple Cheddar Snack Stack Recipe
Who doesn't love a nice piece of good quality cheddar on top of their apple pie? This recipe combines the flavours of that concept but puts it in a snack-tacular way. :-) This was a recipe adapted from a Kraft Cooking magazine.

Ingredients
  • 100 g (approx. 3 1/2 oz) Old Cheddar Cheese (use the good quality stuff)
  • 3 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 1 small apple, cut into 24 thin slices
  • 24 buttery round crackers (Ritz are good... but I've also used the woven wheat types, such as Triscuit)

Directions
  1. Preheat oven to 350 F. Cut cheese into 12 slices and then cut each slice crosswise in half. (1/2 moon shaped) Mix sugar and cinnamon in small bowl. Add apples and toss to coat.
  2. Place crackers on baking sheet. Top with cheese and then the apples. Sprinkle on a bit more sugar/cinnamon if you like.
  3. Bake for about 3-4 minutes (watch carefully!) or until the cheese has melted.
