White Chocolate Creme Brulee Recipe

Ingredients
  • 5 lg egg yolks
  • 1/2 c sugar
  • 2 c whipping cream
  • 3 oz white chocolate, finely chopped
  • 1/4 tsp vanilla
  • 2 tbsp sugar

Directions
  1. preheat oven to 300 and place rack in centre of oven
  2. whisk egg yolds and 1/4 c sugar in medium bowl
  3. bring cream and remaining sugar to simmer in medium saucepan
  4. reduce heat to low
  5. gradually add chopped chocolate to cream mixture and wisk until smooth
  6. gradually wisk hot chocolate mixture into yolk mixture
  7. mix in vanilla
  8. ladle custard into four 10 oz custard cups or creme brulee cups
  9. place cups in large baking pan and add enough hot water to come halfway up sides of cups
  10. bake until custards are set in centre (about 1 hr)
  11. remove custards from water and cool
  12. cover and refridgerate overnight
  13. preheat broiler, sprinkle 1/2 tbsp sugar over each custard
  14. broil until sugar caramelizes, watching carefully (about 2 minutes)
  15. serve hot or refridgerate for about 1 hr and serve cold
