How to make it

  • preheat oven to 300 and place rack in centre of oven
  • whisk egg yolds and 1/4 c sugar in medium bowl
  • bring cream and remaining sugar to simmer in medium saucepan
  • reduce heat to low
  • gradually add chopped chocolate to cream mixture and wisk until smooth
  • gradually wisk hot chocolate mixture into yolk mixture
  • mix in vanilla
  • ladle custard into four 10 oz custard cups or creme brulee cups
  • place cups in large baking pan and add enough hot water to come halfway up sides of cups
  • bake until custards are set in centre (about 1 hr)
  • remove custards from water and cool
  • cover and refridgerate overnight
  • preheat broiler, sprinkle 1/2 tbsp sugar over each custard
  • broil until sugar caramelizes, watching carefully (about 2 minutes)
  • serve hot or refridgerate for about 1 hr and serve cold
