Plum Cobbler With Cornmeal Topping

- One dozen large purple and red plums mixed, ripe but mushy about 4 to 5 pounds plums shopping list
- 3/4 cup sugar shopping list
- 1 Tbs cornstarch shopping list
- 2 tsp vanilla shopping list
- cornmeal dumpling topping: shopping list
- 2 1/2 cups flour shopping list
- 1 cup cornmeal shopping list
- 1 cup sugar shopping list
- 1/2 tsp salt shopping list
- 1 heaping tablespoon of baking powder shopping list
- 2 sticks butter or margaine shopping list
- 1 cup half and half , buttermilk or milk or as needed shopping list
How to make it
- Wash plums, dry, pit and cut into small cubes
- Mix sugar and cronstarch and mix into plums,
- Add vanilla and set aside for 10 minutes.
- Make topping.
- Into a large bowl combine sugar, flour , salt and baking powder.
- Cut in cubed cold butter or margarine into a crumb like mixture as for pie dough
- Add enough liquid to make a moist dough that clings together, but may be a bit sticky.
- Place plums with any liquid into a 9x 13 pan.
- Form dumplings with hands and place evenly acrooss plums in pan.
- Bake in a preheated 375 oven about one hour or until topping is golden and plums juices bubble up
- Cool on rack about 1 hour before serving
- Of course serve with whipped cream, ice cream etc.
