Peanut Butter Chicken Skewers Recipe
Mouth-watering appetizer that can be as spicy as you wish (just add more red pepper flakes)! Perfect food for evening gathering or party- can also served with rice as a main dish. Enjoy!

Ingredients
  • 1/2 cup peanut butter
  • 1/2 cup water
  • 1/4 cup soya sauce
  • 4 garlic cloves, minced
  • 3 Tbsp lemon juice
  • 2 Tbsp brown sugar
  • 3/4 tsp ground ginger (can also use 2-3 TBSP fresh ginger)
  • 1/2 tsp red pepper flakes (or more!)
  • 4 chicken breasts, cubed
  • sliced green onions

Directions
  1. Combine first 8 ingredients in small saucepan over medium heat. Cook and stir for 5 minutes. Reserve half of sauce.
  2. Place cubed chicken on skewers (for wooden skewers, soak skewers in water for 30 minutes before using). brush with generous amounts of sauce
  3. Grill 2 minutes per side, or broil 3 minutes per side, brushing with sauce.
  4. To serve, sprinkle skewers with sliced green onions and serve with remaining sauce for dipping.
  5. Enjoy!
