Hungarian Beef Goulash With Artichokes Recipe
HUNGARIAN BEEF GOULASH WITH ARTICHOKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Borin Estate in Carrollton, Texas in 1986.

Ingredients
  • 3 medium potatoes cut into 1” cubes
  • 2 medium white onions chopped
  • 2 cloves garlic minced
  • 1-1/2 pounds beef stew meat cut into 1” cubes
  • 1 can beef broth
  • 14 ounce can chunky tomatoes with garlic and spices
  • 6 ounce can tomato paste
  • 2 tablespoons hot style paprika
  • 1 teaspoon caraway seed
  • 1/2 teaspoon salt
  • 9 ounce package frozen artichoke hearts thawed
  • 3 cups hot cooked noodles
  • 1/3 cup dairy sour cream

Directions
  1. In small crock pot place potatoes, onions and garlic then add beef.
  2. Combine broth, tomatoes with juice, tomato paste, paprika, caraway seed and salt.
  3. Pour over all then cover and cook on low heat for 12 hours or high heat for 6 hours.
  4. Stir thawed artichoke hearts into cooker then cover and let stand 10 minutes.
  5. Serve over hot cooked noodles then top each serving with a spoonful of sour cream.
