Creamy Spinach Salad Dressing Recipe

I've had this spinach salad dressing for many years and it's still a favorite. It's so easy to make you can have homemade dressing anytime. Recently I've made this successfully with Splenda instead of sugar.

Ingredients
- 1 small onion, chopped
- 1 cup canola oil
- 1/3 cup vinegar
- 1/3 cup sugar
- 1 tbs yellow mustard
- 1 tsp celery seeds
- 1/2 tsp salt
- 1/2 tsp black pepper
Directions
- Add all ingredients to blender and process well. Chill thoroughly. Shake well before serving.

Sounds great! I will be making this tomorrow, I think. I love spinach salads but have grown weary of my usual poppyseed or balsamic dressings. :)

Juels, I think regular olive oil would be fine, but probably not a strong EVOO. Hope it works for you.
