Baked Carrots

- 2lbs carrots,cut in 1/4" slices,divided shopping list
- 6 slices swiss cheese,divided shopping list
- 4Tbs butter shopping list
- 1c minced onion shopping list
- 3Tbs flour shopping list
- 1tsp salt shopping list
- 1tsp chili powder shopping list
- 2c milk shopping list
- 1c fresh bread crumbs shopping list
- 5 slices bacon,cooked and crumbled shopping list
- 2Tbs butter shopping list
How to make it
- Pre heat oven to 350
- Bring a lg. saucepan of water to a boil. Add carrots and cook for 5-7 mins. or till carrots are crisp-tender. Plunge in ice water to stop cooking.
- Layer half the carrots in a 2qt. baking dish. Cover with 3 slices swiss cheese. Repeat with remaining carrots and cheese slices.
- In med saucepan,melt butter over med. heat. Add onion and cook for 2 mins,or till soft. Sprinkle flour,salt and chili powder over onions Cook for 1 min.,stirring constantly.. Add milk and cook for 10 mins,stirring till thickened. Pour sauce over carrots and cheese.
- In a small bowl,combine bread crumbs,melted butter and bacon. Sprinkle evenly over carrots and sauce. Bake for 25 mins.
