Great tasting carrot casserole. Creamy and cheesy.

Ingredients
  • 2lbs carrots,cut in 1/4" slices,divided
  • 6 slices swiss cheese,divided
  • 4Tbs butter
  • 1c minced onion
  • 3Tbs flour
  • 1tsp salt
  • 1tsp chili powder
  • 2c milk
  • 1c fresh bread crumbs
  • 5 slices bacon,cooked and crumbled
  • 2Tbs butter

Directions
  1. Pre heat oven to 350
  2. Bring a lg. saucepan of water to a boil. Add carrots and cook for 5-7 mins. or till carrots are crisp-tender. Plunge in ice water to stop cooking.
  3. Layer half the carrots in a 2qt. baking dish. Cover with 3 slices swiss cheese. Repeat with remaining carrots and cheese slices.
  4. In med saucepan,melt butter over med. heat. Add onion and cook for 2 mins,or till soft. Sprinkle flour,salt and chili powder over onions Cook for 1 min.,stirring constantly.. Add milk and cook for 10 mins,stirring till thickened. Pour sauce over carrots and cheese.
  5. In a small bowl,combine bread crumbs,melted butter and bacon. Sprinkle evenly over carrots and sauce. Bake for 25 mins.

Usually I can "taste" a recipe by reading it. This one has my mental taste buds absolutely stumped. I will HAVE to make it just to get the confusion straightened out. I think it will be fabulous, but I need to know for sure. Sunday.
