BLACK RUSSIAN CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Estes Estate in Dallas, Texas in 1984.

Ingredients
  • 19 ounce devil's food cake mix without pudding
  • 4 serving-size package instant chocolate pudding
  • 1/2 cup vegetable oil
  • 4 eggs
  • 3 teaspoons instant coffee granules
  • 1/2 cup hottest tap water
  • 1/4 cup coffee liqueur
  • 1/4 cup vodka
  • 1/4 cup crème de cacao
  • Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons strong coffee
  • 2 tablespoons coffee liqueur
  • 2 tablespoons crème de cacao

Directions
  1. Preheat oven to 350 and grease a tube pan using solid shortening then set aside.
  2. In large bowl combine cake mix, pudding, oil and eggs.
  3. Dissolve instant coffee granules in hot water and add to cake mix.
  4. Stir in coffee liqueur, vodka and crème de cacao then mix at low speed to blend.
  5. Turn mixer on high and mix 2 minutes then pour into prepared pan and bake 55 minutes.
  6. Using a skewer or cake tester punch holes through to bottom of cake at 1” intervals.
  7. Pour glaze over cake and let absorb before turning cake out onto plate.
  8. For glaze combine sugar, coffee and liqueurs.
