Spiced Sweet Potato Pear Casserole With Bourbon Syrup Glaze Recipe
SPICED SWEET POTATO PEAR CASSEROLE WITH BOURBON SYRUP GLAZE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lopez Estate in Pilot Point, Texas in 1988.

Ingredients
  • 1/2 cup butter
  • 3/4 cup dark corn syrup
  • 1/2 cup pear nectar
  • 1 teaspoon vanilla
  • 1/4 cup bourbon
  • 1 tablespoon orange juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 large sweet potatoes peeled halved lengthwise and cut into 1/3” crosswise slices
  • 4 large crisp pears peeled halved cored and cut into 1/4" lengthwise slices

Directions
  1. Preheat oven to 400 then butter a rectangular baking dish.
  2. Stir butter, syrup, nectar, vanilla, bourbon and orange juice in small saucepan over medium.
  3. Heat until butter melts then increase heat and boil 5 minutes.
  4. Remove from heat then whisk in cinnamon, nutmeg and salt then set aside.
  5. Arrange one third of the sweet potato slices in the buttered dish.
  6. Top with half of the pear slices then one third of the sweet potato slices.
  7. Arrange remaining potatoes and pears on top overlapping slightly.
  8. Sprinkle lightly with salt if desired then pour syrup mixture over all.
  9. Cover dish tightly with aluminum foil then bake one hour.
  10. Uncover and bake until sweet potatoes are completely tender basting occasionally with syrup.
