How to make it

  • Lightly grease a 9 X 13 casserole baking dish
  • Arrange Canadian bacon or ham, overlapping, against sides of dish
  • Cover bottom with toast, keeping bacon or ham in place
  • Separate eggs, placing whites in a large bowl
  • Keep each yolk in its half shell, placing the half back in the egg carton
  • You will use 8 yolks
  • With an electric mixer, beat the whites with 1/2 teaspoon salt and the mustard, until stiff
  • Spread the beaten whites over the toast, meat mixture, mounding high
  • Make 8 depressions, spacing evenly
  • Bake uncovered 1-2 minutes or until slightly set
  • Remove from oven
  • Place an egg yolk in each depression
  • Sprinkle each with a little salt and pepper
  • Bake, uncovered 8-10 minutes, or until whites are slightly golden and yolks are set
  • Serve at once
