Ham And Eggs In A Cloud

- 1 pound sliced baked ham or sliced Canadian bacon shopping list
- 6 slices white bread, toasted, buttered and halved shopping list
- 10 eggs shopping list
- salt to taste shopping list
- 1/2 teaspoon dry mustard shopping list
- black pepper to taste shopping list
How to make it
- Lightly grease a 9 X 13 casserole baking dish
- Arrange Canadian bacon or ham, overlapping, against sides of dish
- Cover bottom with toast, keeping bacon or ham in place
- Separate eggs, placing whites in a large bowl
- Keep each yolk in its half shell, placing the half back in the egg carton
- You will use 8 yolks
- With an electric mixer, beat the whites with 1/2 teaspoon salt and the mustard, until stiff
- Spread the beaten whites over the toast, meat mixture, mounding high
- Make 8 depressions, spacing evenly
- Bake uncovered 1-2 minutes or until slightly set
- Remove from oven
- Place an egg yolk in each depression
- Sprinkle each with a little salt and pepper
- Bake, uncovered 8-10 minutes, or until whites are slightly golden and yolks are set
- Serve at once
