Tarama mashed caviar is fish eggs usually from codfish or carp, I prefer white tarama because I don't want color in it.

Ingredients
  • 200 gr gr white tarama.
  • 750 gr potatoes.
  • 2 c olive oil.
  • 1 ts vinegar.
  • Juice of 1 1/2 lemon.
  • 1 clove garlic chopped.
  • 1 medium yellow onion chopped.
  • 1 fresh onion chopped.
  • 1 sweet red pepper chopped.
  • 1/2 bunch dill chopped.
  • pepper salt to taste.

Directions
  1. Cook potatoes unpeeled ca 20 min till done and let cool.
  2. Peel potatoes and mash, set aside.
  3. Beat tarama, garlic, onions and sweet pepper.
  4. Add potato mash and continue beating.
  5. Add vinegar, lemon juice, dill, keep beating.
  6. Now slowly add olive oil (11/2 c) continue beating.
  7. Add pepper and salt to taste.
  8. If the tarama salad is to thick add some more oil.
  9. Serve with black oilves and pieces of bread to dip.
  10. You can use 750 gr bread for potatoes, then soak the bread in water and drain well.
  11. I prefer potatoes.

One question - what do you consider the difference between a 'yellow' onion and a 'fresh' onion. To me, a yellow onion is your basic cooking onion. Now, a fresh onion....I'm not sure...red, green, vidalia? Any of the above?


I love it Michael! I usually make it with cream of wheat instead potatoes - I will try your version.
