Ingredients
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon cooking oil or olive oil
  • 2 cups cooked wild rice rice
  • nonstick spray coating
  • 2 1/2 pounds meaty chicken pieces (breasts, thighs, and drumsticks),
  • 8 ounce plain low fat yogurt
  • 2 tablespoons all purpose flour
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped green or sweet red pepper
  • 2 medium tomatoes, seeded and coarsely chopped
  • parsley sprigs

Directions
  1. In a large skillet cook onion and garlic in hot oil till onion is tender
  2. but not brown. Stir in cooked wild rice rice.
  3. Spray a 12 x 7 1/2 x 2 inch baking dish with nonstick spray coating.
  4. Spread rice mixture in baking dish. Arrange chicken pieces atop rice.
  5. In a mixing bowl stir together yogurt, flour, cumin, ginger, and 1/2
  6. teaspoon salt. Stir in chopped green or sweet red pepper. Spoon over
  7. chicken in dish.
  8. Bake, covered, in a 350ยบ oven for 50 to 60 minutes or till chicken is
  9. tender.
  10. Serve with chopped tomatoes. Garnish with parsley.

I love wild rice (I'm a Minnesota girl originally and we have growers in the Northern part of the state - delish!), so this sounds like something my family would enjoy for sure. Thanks for a great post!


I like the look of this and wondered if I could cook in a large cast iron pot over a fire? We like to cook like that here in SA it is called a potjie, pronounced pooi- kee


Cooking in cast iron either over a fire or in a oven would enhance the recipe.
