Eggplant Meatballs Recipe
A nice change from traditional meatballs. Serve over hot cooked pasta.

Ingredients
  • 2 large eggplants
  • 2 cups Italian seasoned breadcrumbs
  • 1/4 cup Italian flat-leaf parsley, chopped
  • 3 cloves garlic, peeled and minced
  • 2 large eggs
  • 1 1/2 cups Parmesan cheese, grated
  • vegetable oil

Directions
  1. Wash eggplant. Cut off a slice from both ends, peel and slice lengthwise into quarters.
  2. Cool in boiling salted water until soft.
  3. Drain in colander and cool.
  4. When cool, carefully squeeze to remove excess moisture.
  5. In large bowl, mash eggplant. Add breadcrumbs, parsley, garlic, eggs and Parmesan cheese.
  6. Mix well. Add additional breadcrumbs if needed until you can forn 1 inch "meatballs".
  7. Roll in additional breadcrumbs if desired.
  8. In large skillet, fry in oil until browned.
  9. Serve with a simple marinara sauce.

Question.I know that there's people that dosen't like eggplants.What could people use size the egg plant?I thought that I would ask.
