Southwestern Corncakes

- 1/2 cup yellow cornmeal shopping list
- 2 tblspn all-purpose flour shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1/8 tsp cayenne pepper shopping list
- 1 tblsp vegetable oil shopping list
- 3/4 cup buttermilk shopping list
- 2 large eggs - lightly beaten shopping list
- 1 cup corn kernels - thawed if frozen, drained if canned shopping list
- 1/4 cup monterey jack cheese - grated - Please see note below shopping list
- 1/4 cup red bell pepper - finely diced shopping list
- 2 green onions - thinly sliced shopping list
- 2 tblsp chopped cilantro shopping list
- 1 small hot chili pepper - minced shopping list

- NOTE:- shopping list
- monterey jack cheese is not available in all countries, but a little research tells me that Mozzarella or Gouda are a good substitute shopping list
How to make it
- In a medium bowl, combine cornmeal, flour, soda, salt & cayenne pepper
- Mix together the oil, buttermilk & egg
- Stir into the cornmeal mixture just until combined
- Fold in the corn, cheese, bell pepper, green onions, cilantro & chili pepper
- Pre-heat a heavy duty frying pan ( cast iron is great) at medium/high heat for about 5 mins.
- Drop batter onto pan by 1/4 cupfuls
- Cook 3 - 4 mins or until golden, turning after half the cooking time
- Repeat with remaining batter

Although I am sure we don't have Monterey Jack Cheede over here, this sounds wonderful. I'll try it with whatever cheese. 5
