Ingredients

How to make it

  • In a medium bowl, combine cornmeal, flour, soda, salt & cayenne pepper
  • Mix together the oil, buttermilk & egg
  • Stir into the cornmeal mixture just until combined
  • Fold in the corn, cheese, bell pepper, green onions, cilantro & chili pepper
  • Pre-heat a heavy duty frying pan ( cast iron is great) at medium/high heat for about 5 mins.
  • Drop batter onto pan by 1/4 cupfuls
  • Cook 3 - 4 mins or until golden, turning after half the cooking time
  • Repeat with remaining batter

    I did a little editing on this recipe when I discovered that Monterey Jack cheese isn't available in all countries. Made them again this morning with Mozzarella Cheese & they came out great. Any mild cheese that melts well can be substituted

    I found it in the specialty cheeses but I'm sure you could use Mozzarella or any other cheese. I had to go in & edit the recipe cause I forgot to put to grate the cheese.
