Jambalaya Pasta Recipe
An easy cajun chicken pasta dish

Ingredients
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet red pepper
  • 1/3 cup chopped celery
  • 1 Tbsp butter
  • 1 (14 1/2 oz) can Italian diced tomatoes, undrained
  • 1 (14 1/2 oz) can chicken broth
  • 2/3 cup sliced fresh mushrooms
  • 1 tsp dried basil
  • 3-4 bay leaves
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • salt to taste
  • 8 ounces spiral pasta
  • 2 cups cubed cooked chicken

Directions
  1. In a skillet, saute the onion , peppers and celery in butter until tender
  2. Stir in tomatoes, broth mushrooms, and seasonings.
  3. Bring to a boil
  4. Reduce heat
  5. Cover and simmer for 15 to 20 minutes
  6. Cook pasta according to package directions.
  7. Add chicken to tomato mixture, heat through.
  8. Drain pasta and add to chicken mixture.
  9. Discard bay leaves and serve.
