Lite Turkey Reuben

I found this in a magazine. If you like reuben sandwiches, you'll like this healthier version of it and this would be another way to use up all the left-over Thanksgiving turkey.
Ingredients
- 3 C. coleslaw mix shopping list
- 1/2 C. green onions shopping list
- 1 - 1/2 t. fresh lemon juice shopping list
- 8 sices of rye bread shopping list
- 4 slices of reduced fat swiss cheese shopping list
- 12 oz. cooked lean turkey breast shopping list
- 1/4 light thousand island dressing shopping list
How to make it
- In a small bowl, combine coleslaw mix, green onions & lemon juice.
- Butter slices of bread on one side and place buttered side down in hot (med. heat) pan. Layer each slice of bread with cheese, 3/4 C coleslaw mixture, 3 oz. turkey and 1 T dressing. Cook sandwiches until bread is toasted and cheese melts. (about 4 min. per side).
