Ingredients

How to make it

  • Heat oil in large pot over a medium high heat
  • Add onions and carrots and saute' until starting to brown
  • Add garlic, cumin and oregano and saute' for approx. 1 minute
  • Remove 2-3 peppers (or to your taste) from adobo sauce and mince
  • Add to the onions with 1 tbsp adobo sauce
  • Add the black beans, broth and pork hock or ham
  • Bring to a boil
  • Simmer until beans are very tender
  • Remove pork hock (or ham) from soup
  • Coarsely chop the meat and return to soup
  • Continue to simmer until beans are turning to mush
  • Add vinegar and season to taste
  • Arrange thin slices of avocado on soup with a dollop of sour cream
  • Add a sprig or two of cilantro
