Moms Schnitzel and Schnitzel Pancake

- 2 small shoulder blade veal chops ( bone in ) shopping list
- salt, pepper, paprika etc. shopping list
- 3 eggs shopping list
- 2 Tbs liquid : broth, water or milk shopping list
- 1 cup flour shopping list
- oil to saute shopping list
How to make it
- Season chops to taste
- Fork beat eggs in one dish with rim
- Put flour in another plate ( you may season flour also if you wish )
- Dip each chop in egg mixture, then dip in flour
- Repeat and shake off excess flour.
- Fry in skillet over med high heat until golden on each side,
- Lower heat and continue to cook, turning only one more time on each side until done.
- Make schnitzel pancake.
- Mix remaining flour and egg.
- Add a few Tbs liquid to make a batter.
- Pour batter into pan and fry till golden and done
- on each side.
- Serve along with schnitzel.
- Nice with Potato salad and cucumber salad.

Hey, my Mom used to make the same leftover "pancakes" with the breading stuff, too. That was the best part! Thanks for bringing back the memories. Yum!
