How to make it

  • Prep time does not include beet cooking time
  • Boil beets, rub off skin, and mash to a smooth pulp.
  • Blend cream,eggs, salt, and pepper.
  • Mix in beets and enough flour to bind mixture
  • Cook like pancakes in a hot greased pan.
  • Serve with sour cream and chives

    Love beets - not a fan of sour cream though... any other suggestions? Maybe a dot of butter and chives, just plain & simple?!
