Ingredients

4 good-sized beets

4 Tbs flour or enough to bind

3 Tbs cream

2 eggs

1 tsp salt

1/4 tsp pepper

Directions

Prep time does not include beet cooking time

Boil beets, rub off skin, and mash to a smooth pulp.

Blend cream,eggs, salt, and pepper.

Mix in beets and enough flour to bind mixture

Cook like pancakes in a hot greased pan.

Serve with sour cream and chives
