Pumpkin Fritters

- 4 cups of water shopping list
- 1 lb pumpkin, peeled, seeded and diced shopping list
- 2 eggs, beaten shopping list
- 1 cup all purpose flour shopping list
- 1tsp pumkin spice shopping list
- 1 tsp cinnamon shopping list
- 1 tsp nutmeg shopping list
- 2 tablespoon brown sugar shopping list
- 1 tsp baking powder shopping list
- 1 tsp salt shopping list
- 2 cups cooking oil shopping list
How to make it
- Bring water to boil in saucepan, add pumpkin, cook until tender, about 45 mins. It's easier to cook pumkin in skin, then peel. Drain well. Mash pumpkin into mixing bowl and add eggs. Stir in flour, spices, sugar, baking powder, and salt. beat well with spoon. heat oil in large skillet or any frying pan. Drop rounded spoonfuls of mixture into the hot oil. fry, turning once, until golden brown, about 3 mins. Drain on greasepaper to get rid of excess oil. makes about 48 fritters.
