How to make it

  • Soak chickpeas, harricot and broad beans separately in plenty of water, let stand overnight
  • at same time boil the wheat in 2 cups water, bring to the boil and remove from heat
  • let stand in hot water to soak over night
  • drain and cook the beans separately till soft
  • when chickpeas are cool enough to handle remove shells
  • rinse rice and add to the pan of wheat with 6 cups of reserved cooking liquid bring to the boil
  • let simmer for at least 2 hrs till the wheat is tender if at any time the mix is getting thick or dry add more of the reserved cooking liquids
  • meanwhile soak the dried fruits in hot water for 30 min
  • drain and finely chop figs and apricots
  • add fruit and orange zest to pan of wheat
  • let simmer for 5 min
  • add chickpeas and beans
  • let simmer for 5 min
  • then add the sugar, vanilla and milk
  • stir till sugar disolves
  • cook for a further 15 min
  • add more water if required, consistency of thin porridge
  • remove from heat and stir in the rosewater
  • pour into serving dish or individual bowls
  • after a few hours the consistency will thicken
  • if left over night it will be perfect
  • serve chilled
