How to make it

  • Remove stalks from spinach
  • chop finely and add to the cheese and 2 of the eggs
  • spread out 1 sheet of the pastry and brush with oil/butter
  • fold in half and brush again
  • repeat with the second sheet
  • if using filo pastry layer 3 sheets of pastry twice then brush with oil/butter, fold in half
  • and brush again
  • divide filling out over the two folded sheets of pastry
  • if using potato and spinach use one ing per sheet
  • roll up sheet length ways incorporating filling
  • preheat oven to 108c/350f/gas mark 4
  • in a greased baking dish carefully coil the first one around itself
  • continue with the second, coiling it around the first
  • fold ends underneath
  • whisk the third egg and add a little olive oil
  • brush over top and sprinkle with sesame seeds
  • bake in moderate oven for 40 min.
  • till golden brown
  • serve hot or cold and this dish is easily reheated.
