Ingredients

1 lb spinach leaves

200g/ 7oz feta cheese

3 eggs beaten

2 sheets yufka / 6 sheets filo pastry

olive oil/butter

toasted sesame seeds

freshly ground black pepper

Directions

Remove stalks from spinach

chop finely and add to the cheese and 2 of the eggs

spread out 1 sheet of the pastry and brush with oil/butter

fold in half and brush again

repeat with the second sheet

if using filo pastry layer 3 sheets of pastry twice then brush with oil/butter, fold in half

and brush again

divide filling out over the two folded sheets of pastry

if using potato and spinach use one ing per sheet

roll up sheet length ways incorporating filling

preheat oven to 108c/350f/gas mark 4

in a greased baking dish carefully coil the first one around itself

continue with the second, coiling it around the first

fold ends underneath

whisk the third egg and add a little olive oil

brush over top and sprinkle with sesame seeds

bake in moderate oven for 40 min.

till golden brown

serve hot or cold and this dish is easily reheated.
