Turkish Spinach And Cheese Pastry Roll

- 1 lb spinach leaves shopping list
- 200g/ 7oz feta cheese shopping list
- 3 eggs beaten shopping list
- 2 sheets yufka / 6 sheets filo pastry shopping list
- olive oil/butter shopping list
- toasted sesame seeds shopping list
- freshly ground black pepper shopping list
How to make it
- Remove stalks from spinach
- chop finely and add to the cheese and 2 of the eggs
- spread out 1 sheet of the pastry and brush with oil/butter
- fold in half and brush again
- repeat with the second sheet
- if using filo pastry layer 3 sheets of pastry twice then brush with oil/butter, fold in half
- and brush again
- divide filling out over the two folded sheets of pastry
- if using potato and spinach use one ing per sheet
- roll up sheet length ways incorporating filling
- preheat oven to 108c/350f/gas mark 4
- in a greased baking dish carefully coil the first one around itself
- continue with the second, coiling it around the first
- fold ends underneath
- whisk the third egg and add a little olive oil
- brush over top and sprinkle with sesame seeds
- bake in moderate oven for 40 min.
- till golden brown
- serve hot or cold and this dish is easily reheated.
