Ingredients
  • 5 large red bell peppers
  • 4 red chili peppers (medium strong)
  • The zest of one lemon
  • 1 kg sugar

Directions
  1. Remove the seeds from the peppers and the chilies. Coarsly chop.
  2. Put the peppers and the chilies in a casserole, add water until it reaches a couple of centimeters above the bottom of the casserole.
  3. Simmer for 10 minutes
  4. Blend to a purée and add the lemon zest
  5. Measure the volume of the purée and add an equal volume of sugar
  6. Simmer until it has reduced with about 1/3

It's my mother-in-law's favorite. She expects a jar every Xmas; she doesn't eat it with mature cheese, though, but with Cottage Cheese. We've served it with deer or as is more common in Norway; reindeer.


I have tons of organic peppers left to try this gem of a recipe .The best thing is I will have enough to can some for the winter.
