Parslied Potatoes

- 1 1/2 lbs small new red potaoes - scrubbed shopping list
- 1 Tblspn vegetable oil shopping list
- 1 medium sized onion - chopped shopping list
- 1 small clove garlic - crushed & chopped shopping list
- 1 cup chicken broth shopping list
- 1 cup fresh parsley - chopped & divided shopping list
- 1/2 tsp pepper shopping list
How to make it
- Peel a strip of skin from around each potato
- Place potatoes in cold water - set aside
- Heat a large skillet over med/high heat & add oil
- Saute onion & garlic for about 5 mins until tender
- Add broth & 3/4 cup parsley - mix well
- Bring to a boil
- Drain potatoes & place in a single layer in skillet
- Bring to a boil & then reduce heat
- Simmer covered for about 10 - 15 mins or until potatoes are tender
- Remove potatoes with a slotted spoon to serving bowl
- Add pepper to skillet & stir
- Pour sauce over potatoes & sprinkle with remaining parsley
