How to make it

  • Peel a strip of skin from around each potato
  • Place potatoes in cold water - set aside
  • Heat a large skillet over med/high heat & add oil
  • Saute onion & garlic for about 5 mins until tender
  • Add broth & 3/4 cup parsley - mix well
  • Bring to a boil
  • Drain potatoes & place in a single layer in skillet
  • Bring to a boil & then reduce heat
  • Simmer covered for about 10 - 15 mins or until potatoes are tender
  • Remove potatoes with a slotted spoon to serving bowl
  • Add pepper to skillet & stir
  • Pour sauce over potatoes & sprinkle with remaining parsley
