One great apple cake.... Golden delicious or Granny Smith or some other tangy apple is best...

Ingredients
  • 2 Lemons
  • 4 Apples
  • 125g blanched almonds
  • 100g butter
  • 2 tspn vanilla essence
  • 300g caster sugar
  • 2 eggs
  • 150ml milk
  • 5 tbs plain flour
  • 1 1/2 tspn baking powder

Directions
  1. Preheat oven to 150degC
  2. Line a 23cm baking tin with paper. Grease lightly.
  3. Grate lemon zest.
  4. Peel, core and slice apples finely.
  5. Grind almonds to a fine flour.
  6. Melt butter.
  7. Mix sugar with vanilla essence.
  8. Beat vanilla sugar and eggs together til thick and light.
  9. Slowly add milk and melted butter.
  10. Fold almond flour into the plain flour, then stir into the batter.
  11. Add the baking powder, zest and 3/4 of the apple. Fold.
  12. Pour into prepared baking tin, and put the remaining apple over the top. Scatter with 1 tbs sugar.
  13. Bake 60 mins. Remove from tin when cool.
