Chicken Fingers with Honey Mustard

- 4 skinless, boneless chicken breasts - about 4 oz each shopping list
- 1 cup all-purpose flour - Please see NOTE at bottom of directions shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 3/4 cup milk shopping list
- 1 cup vegetable oil - for frying shopping list

- Honey Mustard:- shopping list
- 1/2 cup honey shopping list
- 1/4 cup Dijon mustard shopping list
- Stir together in small bowl shopping list
How to make it
- Prepare honey mustard a day ahead to let the flavors blend
- Cut chicken into 1/2' x 2" strips
- Place flour, salt & pepper in a re-sealable plastic bag, shake to mix
- Place milk in a bowl
- Dip chicken strips in milk & place into thebag of flour in batches
- Shake to coat well
- Shake excess flour off each piece & place on wax paper in single layer until all are coated
- Divide chicken into batches
- Heat 1/4 inch of oil in a large heavy skillet over medium/high heat
- Place chicken strips in an even layer in hot oil
- Fry, turning once, for about 3 mins on each side or until golden brown
- Drain on paper towels
- Repeat until all chicken is fried, keeping the rest warm in a low heat oven

- NOTE:- If you would prefer fingers a little spicy, add 1/4 tsp cayenne pepper to the flour mixture
